Honey Sriracha Minced Chicken with Peas and Broccoli
This is a firm favourite, even the son, who doesn't ‘do’ mince loves this…
serves 4
super easy
1 tbsp rapeseed oil
500g tenderstem brocolli
450g chicken mince
3 tbsp sweet chilli sauce
2 tbsp honey
2-3 tbsp sriracha or to taste
2 tbsp soy sauce
1 tbsp sesame oil
1 tsp garlic granules
1 tsp ground ginger
150g frozen peas
white toasted sesame seeds and spring onions to garnish
basmati rice to serve
salt and pepper as needed
heat 1/2 tbsp of rapeseed oil in a large skillet over a high heat and add the tender stem brocolli. Leave untouched to brown and turn until still super green and just done. Pop on a plate
add the remaining oil, heat and add the chicken mince. cook until browned
whilst cooking, mix the remaining sauce ingredients together. when the chicken is all browned, add the sauce and thicken, adding the peas half way through. then pop the tenderstem to heat through and garnish with the sesame seeds and spring onions
serve with the rice and eat!
